Istria's Long Tradition of Olive Cultivation

The turning point in the Chiavalon estate's extra virgin olive oil production was the introduction of an innovative early harvest technique, previously unknown in the region. The Chiavalons pick olives when a third have ripened, processing them within hours using a modern cold press method in a controlled environment. This approach preserves the oil's purity, reflecting the fruit's quality.

The Chiavalons' collaboration with MORI TEM s.r.l., a leader in olive milling technology, quickly established the Chiavalons as a hub of the Istrian olive industry. Their advanced equipment features a cooling system that maintains a stable temperature of 66 to 70°F throughout production, ensuring exceptional oil quality.

To further protect the quality of the olive oil, the Chiavalons store it in stainless steel containers filled with inert gas, preventing oxidation and maintaining a steady temperature of 16°C. The Chiavalons have also perfected the art of blending, skillfully combining various monovarietal extra virgin oils to create unique fragrances and flavors that form our signature blend.
